Dark Chocolate-Cherry Cookies:
Ingredients:
preheat the oven to 375 fairenheit
1 cup whole wheat pastry flour
1 cup organic all-purpose flour
1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup unweetened, shredded Coconut
1 cup dark cocoa powder
1/2 cup dried cherries
2 eggs
2 sticks butter
3/4 organic evaporated cane sugar
3/4 organic dark brown sugar
1 tsp vanilla extract
Prep and Baking:
Combine flour, baking soda, salt, shredded coconut, and cocoa powder in a medium bowl stir until all mixed together.
In a mixer combine the butter and sugar and beat until smooth. Add the eggs one at a time and mix until light and fluffy. Add the vanilla. Add a little bit of dry mixture to the wet mixture and mix in. Repeat that until the dry mixture is gone. Add the dried cherries. Beat all together. Line 2 pans with parchment paper. With a metal spoon take a dollop of batter and plop it on the pan, when the pan is full slide it in the oven and set the timer for 10 minutes. When its done take it out and let cool for 2 minutes. Repeat with the other pan.
